Here Charlotte and I are picking gorse:
I'm not too sure why we haven't tried it out before; I don't think there's a more iconic Manx countryside plant.
Quite a few people have mentioned it, or asked about it; so we're giving it a go. It's an interesting one because it's missing from every book we've got (and we've got quite a few!)... Hugh's given us a starting point though.
First impressions are good; the flowers have a really interesting aroma, almost coconutty, and they have much more flavor than I thought they would. So we've put down a variety of batches to start developing our own Manx Gorse recipe. We'll let you know when it's tasting time!

sound exciting! the only thing more manx than this would be cushag... but it's poisonous (at least to horses) so maybe not try that! good luck and I look forward to flavour updates. Happy Christmas! X
